Cous Cous

Purple aubergine

Courgette

Ginger

Extra virgin olive oil

Salt and pepper

Preparation
Cook the cous cous and place in a large bowl, covering with a cloth.
Chop and fry the aubergine, courgette and peppers separately and, while they are cooling, fluff the cous cous with the palms of your hands.
Add the vegetables, finely grated ginger, chopped basil and mint.
Season to taste with salt, pepper and oil.
