Red mullets

Preparation
Place the three oranges on a flat surface, slice only two of them and squeeze the other one. Chop the spring onions and place them in a bowl, together with the orange slices, salt and pepper.
Start filleting the red mullet and combine the orange juice with 150g of olive oil. Pour half of the juice into a pan together with the mullets and let them marinate for at least ten minutes. Add the remaining part of the juice to the bowl with the sliced oranges.
In a baking dish, place the red mullets and season with salt and pepper, adding fennel seeds to taste. Finally, bake them at 180°C in grill mode for a few minutes until they create a crust.
Once cooked, arrange the mullets on a serving plate, adding the chopped parsley and the orange salad.
