Broccoli Fritters

Ingredients

For 4 persons
  • broccoli

    Broccoli

    1 kg
  • uova

    Eggs

    2
  • parmigiano

    Parmesan

    1 spoon
  • pan grattato

    Breadcrumbs

  • Provola

    Provola

    80 gr, diced
  • Olio per friggere

    Frying oil

  • Sale e pepe

    Salt and pepper

    q.s.

Preparation

Boil the broccoli, drain and press with a potato masher.

Add the eggs, parmesan, a spoonful of breadcrumbs and a pinch of salt and pepper.

Knead until it becomes a homogeneous dough and mould into balls.

Place a piece of provola inside each ball.

Coat in breadcrumbs and fry in hot oil.

Remove excess oil with kitchen paper and serve hot.
